This is one of the most famous dishes of Lithuania, called kugelis. It is usually made as a hearty dish that is real comfort food. This is a lighter recipe with less fat than the traditional version. Kugelis is served topped with crispy onion rings.

Ingredients

  • 800 g/ lb potatoes, peeled and grated
  • 2 eggs, beaten

Method

  1. Preheat the oven to 200°C/400°F/Gas 6. Wrap the grated potatoes in a piece of muslin (cheesecloth) and squeeze out as much liquid as possible. Discard the liquid. Put the potatoes into a bowl and stir in the beaten eggs, potato flour and baking powder.
