It would be impossible to have a cookbook on Baltic cuisine without including one of the most common recipes in Estonia: sauerkraut cooked with beer. There are many versions of this recipe, but this version is particularly good, topped with crunchy black pudding. Buy the best black pudding you can. Sauerkraut is made in homes all across the Baltic, but it is readily available in most supermarkets.
