Pirucad are typical Estonian pastries, and similar versions can also be found in Russia and Poland, although the Polish pirogi are boiled and not baked as here. The pastry in this recipe is enriched with sour cream and caraway seeds, which makes it exceptionally tasty, enclosing a stuffing of beef with dill. The pastries are eaten as snacks or as a lunch, and often served with potatoes.
