The people of the Baltic States love their croquettes. This recipe would use whichever fish is in season, ideally a mixture of smoked and unsmoked. A cold potato salad and gherkins are traditional and tasty accompaniments.

  • 900 g/2 lb white fish fillet (smoked or preferably a combination of smoked and unsmoked), bones and skin removed
