This is a very modern take on an old classic, Estonian rosolje. This dish is an essential on the smorgasbord table and it is a combination of herring, ham, potatoes and beetroot. It is a common item on menus in many restaurants, as it makes a perfect light snack.

Ingredients

  • 2 fillets of pickled herring, drained and diced
  • 1 large potato, boiled and diced
  • 2 large cooked beetroot (beets), peeled and

Method

  1. To make the dressing, put the sour cream in a bowl and add the vinegar, mustard, grated beetroot and horseradish. Season to taste and combine well. Set aside.
  2. Put the herring in a large bowl with the potato, beetroot, onion, apples, gherkins and ham. Season and mix together gently.
  3. Add the dressing to the mixed salad and gently toss together to combin
