Gravlax was originally a Swedish dish and there is so much Scandinavian culinary influence in the Baltic that many of the fish dishes involve this way of preparing fish. Normally gravlax is prepared with salmon but here trout is used, which makes a tasty change. Vodka is included in the curing process and gives the gravlax an authentic Baltic flavour. It makes a great accompaniment to many dishes, such as salads and sandwiches, or can be used as a topping for blinis.
