A real tradition in the Baltic States, baked ham is often prepared at a time of family celebration. Favourite spices are rubbed into the joint, then apple and mustard are added to give the meat a wonderful flavour. Serve with rye bread.

Ingredients

  • 1 cooking apple, peeled, cored and cut into chunks
  • 4.5-5 kg/10-11 lb leg of ham (on the bone)

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Put the cooking apple in a small pan with 15ml/1 tbsp water and cook over a medium heat until very soft. Mash to a purée or use a blender. Set aside.
