Here is a simple recipe for a Latvian bread pudding that uses, unusually for a Baltic recipe, white bread and not rye. Serve with a spoonful of homemade apricot preserve, or a good-quality bought one.

  • 200 g/7 oz white bread slices, crust removed

Method

  1. Preheat the oven to 180°C/350°F/Gas 4 and grease a 15 x 20cm/6 x 8in ovenproof dish. Process the bread in a food processor or blender until you have breadcrumbs. Transfer into a bowl and add the cream and butter, mixing well.
