Cheesecakes are much loved in the Baltic and there are many different variations to be found. This one, from Riga, is unusual in its use of goat’s cheese and it has a thick and fragrant raspberry sauce to drizzle over the top.

  • 225 g/8 oz/1 cup creamy, thick goat’s cheese

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Butter six ramekin dishes. Put the goat’s cheese and sugar in a bowl and whisk together until light and fluffy, using an electric mixer, if you like.
