Chocolate and ginger are a traditional festive combination and these cookies are favourites in Estonia, Latvia and Lithuania, especially at Christmas time. You can make the dough in advance and freeze it, if you like, so it is stored ready to make quick seasonal cookies when you need them.

Ingredients

  • 200 ml/7 fl oz/scant 1 cup golden (light corn) syrup

Method

  1. Heat the golden syrup and sugar in a pan over a medium heat, and stir constantly until the sugar has dissolved. Add the cinnamon, cloves, cardamom, ginger and allspice.
  2. Add the melted butter and stir to combine. Leave to cool completely.
  3. Transfer into a large bowl and add the eggs, stirring well to mix thoroughly. Gradually stir in the flour and bicar
