The combination of rye, poppy seeds and honey is a classic Baltic mix of ingredients, with the poppy seeds adding a fine, nutty texture. Variations of these light cookies can be found all over the Baltic region.

Method

  1. Put the butter and sugar in a bowl and beat until creamy, using a hand mixer if you like. Sift in the flours and baking powder and combine using a wooden spoon. Add the honey and mix well. Shape the dough into a thick sausage shape about 20cm/8in long.
