Fennel seeds give extra spice to bread, as well as to compôtes, pickles and liqueurs. This yeast-free bread is so deliciously light and fluffy, that when eaten warm, it could easily be described as a cake. Serve it with lashings of butter.

  • 1 litre/ pints/4 cups buttermilk

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Grease and line a 25 x 40cm/10 x 16in cake tin (pan) with baking parchment. Put the buttermilk in a pan and gently heat until lukewarm, and then add the melted butter. Pour the mixture into a large bowl.
