A fresh, crunchy salad of raw red cabbage is rich in vitamins and minerals and is particularly good in winter, when fresh vegetables are more limited. You can make the salad with white cabbage too, but use white wine vinegar for the dressing. This is delicious served with slices of smoked duck breast.

Ingredients

  • 800 g/ lb red cabbage
  • 30 ml/2

Method

  1. Trim the red cabbage and slice it finely. Put it in a bowl, season with salt, pepper and sugar, and pour over the vinegar and sunflower oil. Toss the salad thoroughly, using your hands, then place in the refrigerator and chill for at least 3 hours to allow the cabbage to absorb the dressing.
