This can be eaten as a side dish, but actually it is so good that it deserves to be served on its own. The recipe is from Saxony in the heart of Germany, and when you see it on a menu it is a sure sign that spring has begun. Asparagus, sugar snap peas, young carrots and morels – all represent the new season. If you can’t get crayfish, use prawns.
