In German this dish is known as ‘heaven and earth’– heaven for the apple, and earth for the potato. The recipe comes from Westphalia in the middle of Germany, and is a winning combination of fruity and savoury ingredients.

Method

Heat 15ml/1 tbsp oil in a pan over medium heat and cook the onions for 2-3 minutes. Add the apple, lemon juice, sugar and 15ml/1 tbsp water. Simmer gently until the apple is soft, and add the butter. Add the apple mixture to the hot boiled potatoes and mash together. Season with salt, pepper and nutmeg. Keep warm.
