It is an old custom in Germany to eat lamb on Easter Day as a symbol of the Resurrection of Jesus. Easter is traditionally a time when families get together, and the highlight of the festival is this celebratory meal.

Ingredients

  • 1 kg/ lb boned leg of lamb

Method

  1. Season the lamb with salt and pepper. Heat 15ml/1 tbsp of the oil in a large flameproof casserole over high heat and brown the lamb on all sides, then remove. Add the vegetables to the pot and cook for 4 minutes until browned.
  2. Add the tomato purée. Stir occasionally and allow the paste to darken. Before it starts to burn, pour in the red wine and about 2 litres
