This recipe comes from Mecklenburg, West Pomerania and Brandenburg. Armer Ritter means ‘poor knights’, perhaps because it’s a way of using up the previous day’s bread. Children love it for breakfast as well as dessert.

Ingredients

  • 2 eggs
  • 400 ml/14 fl oz/1⅔ cups mi

Method

  1. Make the apple compote first. Heat the sugar in a pan over medium heat until it caramelizes. When it turns golden brown, plunge the base of the pan into a bowl of cold water to stop the sugar burning. Stir the apple juice and lemon juice into the caramel. Stir in the apples and raisins and cook for 6-7 minutes. Remove from the heat and leave to cool.
