Gingerbread belongs to Christmas just as much as presents under the Christmas tree. It is flavoured with cloves, cinnamon, ginger, cardamom, allspice and nutmeg, which can now be bought as Lebkuchen mix.

Method

Preheat the oven to 160°C/325°F/Gas 3 and line a 40x30cm/16x12in baking tray with baking parchment.
Heat a frying pan over medium heat and toast the hazelnuts, moving them around so that they brown evenly. Remove from the heat, cool, then chop finely.
