Method

  1. Grind the shallots and garlic in a mortar or blender. Knead this paste with all the other ingredients, except the oil for deep-frying, to form a smooth dough. On a floured surface, roll the dough out as thinly as possible and cut into small squares.
  2. Deep-fry the dough squares in very hot oil in a wok until light golden brown and crispy, about 2 to 3 minutes. Se
