Raita, a soothing yogurt-based side dish, is an excellent foil to any spicy Indian dish. Although often made with a wide variety of vegetables and even bananas, Cucumber Raita is perhaps the most popular.

Ingredients

  • 1 medium or 2 small cucumbers (about 300 g/10 oz total), peeled

Method

  1. Halve the cucumbers lengthwise and deseed them. Then cut crosswise into paper-thin slices. Sprinkle the salt over the cucumber and set aside to dram in a colander for 10 minutes. Squeeze out as much water from the cucumber as possible, then rinse off the salt and squeeze again. Allow to drain well.
  2. Place the cucumber in a small bowl. Add the shallots, yogurt an
