A fabulously simple dish made - with two favourite ingredients of Asturias: pork and apples. The sweet smell of smoky cured sausage and fermenting apples that pervaded the chigre, or cider bar, where I first encountered this dish is just unforgettable.
Try cooking this dish with red wine instead of cider. But beware, the combination of red wine and chorizo is guaranteed to stain anything and everything, so not a moment for the favourite white linen tablecloth.
