The potato omelette (omelet) graces virtually every bar in Spain. It is eaten for breakfast, as a pre-prandial snack and enjoyed among a myriad of tapas along with a drink. When travelling by train, I am always intrigued by the carefully wrapped foil parcels that emerge from bags and baskets at lunchtime, more often than not there will be a wedge of juicy tortilla among them: the perfect transportable picnic food.
