This is a really refreshing summer tortilla, great when broad (fava) beans are in season. In Barcelona’s Boquería market the ladies busy themselves podding tiny, tender broad (fava) beans between customers so you can buy them ready for the pot.

If you are the “podder”, a more likely scenario, and discover that your beans are a little larger and more leathery than hoped, then it really is worth skinning them too - a true labour of love or a good excuse to sit down with a glass
