Meatballs are standard fare at tapas bars, on restaurant set menus and in the home kitchen. Most Spanish cooks wouldn’t even require a recipe to prepare them; it’s just second nature. Meatballs vary but most are made with a combination of pork, and beef or lamb. I ate an exquisite wild boar meatball stuffed with a chestnut in the Pyrenean foothills.
