Marmitako is a classic Basque dish, cooked aboard the fishing boats for generations. It was a staple on long trips when onions, dried peppers and potatoes were the only ingredients that kept well for weeks on end and accompanied the seemingly never ending supply of tuna. The dish is usually eaten as a starter (appetizer), but would make a delicious light lunch or supper dish, mopped up with some crusty bread.
