This salad is a Catalan classic - a really light and refreshing starter (appetizer). Once the cod has been soaked adequately it really won’t be too salty at all but the texture will be divine. The idea of raw salt cod can be a little scary for the uninitiated, but just think of bacalao as the ham of the sea, and suddenly it seems much more appealing.
