Rioja’s wines enjoy worldwide fame but within Spain the region’s vegetables receive cult status too. It would be difficult to imagine the local cuisine without peppers, introduced in the sixteenth century from the Americas. This dish is a pepper “fest” with fresh green (bell) peppers, dried red choricero peppers, a chilli (chili pepper) and the even chorizo flavoured with paprika.
