I never tire of these wonderful Catalan charred vegetables. Escalivada translates as “cooked in the embers” and the vegetables do taste great prepared in the barbecue coals or even placed in the embers of your log fire, if you are lucky enough to have one. However, I usually end up cooking this in the kitchen with astonishingly good results, you just can’t tell the difference if you take the time to really blacken the skins.
