This is a really speedy dish; it can be thrown together in minutes when you run in from work. The ingredients are all great storecupboard (pantry) standbys so there’s no last minute shopping to do either.

I always keep the vacuum-packed, soft, cooking chorizo in my refrigerator for such occasions but you could use the firmer rings that are more readily available in supermarkets. I love the spicy heat of the chorizo picante but the choice is yours, the sweet dulce
