Black rice is a popular dish along the Catalan coast and recipes vary greatly. In Sitges this dramatic dish is served jet-black, stained with the ink from the squid or cuttlefish. Further north on the Costa Brava many would claim that an authentic arroz negro contains no ink at all; there the dark colour of the dish comes from the lengthy caramelization of the onions. I will leave it up to you, but I just love the striking appearance and the salty flavour of the ink.
