Gone are the days when the rivers of Asturias teamed with wild salmon and trout, nevertheless hopeful anglers are a still a common sight in the spring and early summer months. Nowadays fishing is strictly controlled and it is much more likely that you will be preparing this recipe with farmed fish, although do at least try to make sure that it is organic. The salty ham and acidic cider contrast beautifully with the salmon’s oily flesh.
