Trout with Crisp Jamón and Braised Red Cabbage

The combination of ham and trout is a classic dish, known as Truchas a la Navarra. Like so many traditional recipes there are numerous variations: some insist that a whole trout be stuffed with cured ham while others wrap the fish up in a ham blanket.
