Sardines are midsummer fare all along the north coast of Spain. What could be better than a sardine cooked on the barbecue at the beachside bar? No cutlery required; there is something very satisfying about using fingers and gnawing at the bone, leaving a pile of skeletons worthy of Felix the cartoon cat.
These stuffed sardine fillets are a little more refined and really delicious. They would make a wonderful summer lunch.
