Hake is the most popular fish in Spain, in fact the Spaniards eat so much of the stuff that the rest of us find it hard to come by.

The local line-caught hake, merluza de anzuelo, is like gold dust, snapped up by restaurant chefs and gourmets at extortionate prices. The net-caught hake is more common. Just make sure that it is really fresh as some of the fish has spent a few days on the trawler before it even hits the market floor.
