I adore the olive stalls in Spanish markets, with so many varieties of olive to choose from and those lovely cloves of pickled garlic. The marinade is delicious with a mixture of firm green olives such as manzanilla and the juicy little brown arbequinas. Just avoid the firm, pitted black olives sold in cans; they have no flavour at all.
