Piquillo peppers are one of my favourite storecupboard (pantry) ingredients. They are sold in cans and jars, really bitter when raw but once roasted they have an incredibly intense flavour.
Peeling the peppers is quite a business, as every effort is made to keep the peppers whole for stuffing. You can use the more economical tiras, or strips, for this recipe since you will be blitzing it anyway.
