Adapted from the recipe for ‘Buknade’ in Two Fifteenth Century Cookbooks (Harl. MS 4016).

Ingredients

  • 750 g / 1 lb 10 oz / 5 cups diced

Method

  1. Place the veal, vegetables, thyme, bay leaf, mace, cloves, water and wine in a large, lidded casserole. Bring to the boil, cover and simmer for 30 to 45 minutes, or until tender.
  2. Strain the stew through a sieve into a jug, removing the meat and reserving until required. If you are making this ahead of time, refrigerate the meat when cool.
