Ingredients

  • 2 pinches / 40-60 saffron strands, crushed
  • 2 tbsp boiling water

Method

  1. Before you start cooking the lamb shanks infuse the saffron in boiling water.
  2. In a separate bowl mix the salt and ground spices.
  3. Heat the oil in a large, lidded, flame proof casserole. Season the lamb shanks with salt and pepper then brown in the oil. Remove the shanks and drain on absorbent paper.
