Apricot Cake

I was not convinced that the saffron would have that much of an impact in this recipe, adapted from Florence Jack’s Cookery for Every Household (1914), as it is only in the icing. However, it pleasantly surprising what a difference it makes. Plus, this is an incredibly pretty cake when finished.
