This is a recipe inspired by one found in Two Fifteenth Century Cookery Books (Harl MS 4016). Risshewes are sort of like a deep-fried medieval mince pie although you can eat them at any time of the year. They are amazing fried but I have provided instructions for a baked version below for those who don’t like the idea of fried pastry.
