Mutton (or Lamb) and Mango Curry (Kulleah Umber)

Mutton is a much underused meat in my opinion. It seems to have acquired a reputation for being tough and fatty with a strong flavour. I find mutton none of these things and would urge you to use it in this recipe if you can source it. However, lamb can be used as an admirable substitute. This is a lovely mild curry, adapted from Robert Flower Riddell’s recipe for Kullear Umber in Indian Domestic Economy and Receipt Book (1853), with
