Inspired by the recipe ‘Oysters In Gravy Bastard’ in Two Fifteenth Century Cookbooks (Harl. MS 279).

Ingredients

  • a small pinch /10-15 saffron strands, crushed
  • 150 ml / ¼ pint /

Method

  1. Infuse the saffron in a tablespoon of ale.
  2. Melt the butter in a small pan then fry the shallot and fresh ginger until golden. Add a good pinch of white pepper then stir in the plain flour followed by the remaining ale and one teaspoon of the sugar (there is no need to add salt as the oysters are salty enough). Gently simmer for 3 to 5 minutes u
