Ingredients

  • 2 spring onions, washed and trimmed
  • 2 smoked mackerel (150-200 g / 5-7

Method

  1. Cut the spring onions into thin roundels including the green bit.
  2. Remove the skin from the smoked mackerel fillets then break the fish into chunks
  3. Drain and rinse the beans. Place in a large bowl with the onions and mackerel. Add the herbs, saffron vinaigrette, lemon juice, a couple of pinches of coarse ground pepper and a little salt
