Brie is generally an exceedingly polite cheese. Its mild mannered nature means it rarely makes its presence known in the fridge (unless you get a particularly aged, bolshy one). That’s not to say it’s not flavoursome and it lends itself well to this rich cheese tart. But if you do want some-thing a bit bossier by all means use a ripe Camembert instead. This recipe adapted from one for ‘Tart of Bry’ in Forme of Cury (1390), is very rich so a little goe
