Saffron was used in the dairying process to colour butter and cheese. It was also used by the likes of Thomas Dawson to colour diary free almond butter which was useful during Lent.

So long as you have an electric mixer or whisk, butter is easy to make at home. The seaweed adds a saltiness to the butter but could be substituted with a tablespoon of mixed herbs or some finely crushed garlic (just remember to add salt if you don’t use seaweed).
