Butternut Caprese

Method

  1. Peel cube (1-inch) & roast 1 medium butternut squash with olive oil, salt, & pepper Roast at 425°F 25-30 min.
  2. Combine with: 1 c(150 g) cherry tomatoes, sliced in half 1 ripe avocado, cubed 1 c (120 g) smoked mozzarella, cubed ½ c(20 g) basil, chopped
  3. Dress with olive oil, balsamic vinegar, salt, & pepper
