1 large watermelon radish (thinly sliced by hand or with a mandoline. chop some into matchsticks for garnish)
2 peeled oranges (sliced into ¼-inch rounds)
½ red onion (sliced into thin rings)
2 sprigs of mint (cut in chiffonade)
2 scallions (chopped)
Dress with olive oil & salt
