Method

Cut into ¼-inch slices: (try to find potatoes & onions with a similar diameter)

Bay

3 sweet potatoes

3 small red onions

3 red potatoes

Line up the slices in a greased 9-by-13-inch pan alternating, like dominoes slip in bay leaves between every few slices about 15 dry or 10 fresh (cut in half)

Drizzle 2 T melted butter & 3 T olive oil over all plus salt, pepper, & 2 minced garlic cloves

Bake until fork tender & a bit crispy on the edges 425°F, about 1 hour
