Accordion Zucchini

Yield: Serves 1
Ingredients: Slice a garlic clove into paper-thin circles & slip them into the slots; Make little cuts all the way down a small zucchini about ¾ of the way through; Drizzle each with: olive oil, salt, & pepper, Bake at 375°F for 45-50 min., or until tender; Sprinkle with about 2 t grated Parmesan 5 min. before it comes out of the oven
