Method

chopped cauliflower 1 small head

corn kernels 2 ears

Roast Corn & Cauliflower with

½ t red pepper flakes

½ t chili powder

½ t garlic powder

olive oil, salt, & pepper

425°F, 15–20 min. (until golden)

Spoon into warm tortillas (enough for 4-5)

Top Each Taco with

  • 1 T Greek yogurt
  • 1 T feta
  • hot sauce
